- In a large pot, heat a tablespoon of olive oil over medium heat. Add the Italian sausage to the pot and cook for about 5-7 minutes or until browned, breaking it into smaller pieces as it cooks.
- Once the sausage is browned, add chopped onion, garlic, carrots, and celery to the pot. Stir and cook for about 5 minutes until the vegetables start to soften.
- Add the diced tomatoes (with juice) and the broth to the pot. Stir everything together and bring it to a simmer.
- Once the soup is simmering, add the pasta to the pot and cook according to package instructions, usually about 8-10 minutes, stirring occasionally.
- When the pasta is almost done, stir in the fresh spinach and Italian seasoning, then let it simmer for another 2-3 minutes until the spinach wilts.
- Taste and adjust with salt and pepper according to your preference.
- Ladle the soup into bowls and enjoy.
Notes
Serve with crusty Italian bread and sprinkle with freshly grated Parmesan cheese for added flavor. Store leftovers in airtight containers.
