  • 1 pound Italian sausage (mild or hot)
  • 1 cup chopped onion
  • 2 cloves minced garlic
  • 2 chopped carrots
  • 2 stalks chopped celery
  • 14.5 ounces can of diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup small pasta (e.g., ditalini or orzo)
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 1 tablespoon olive oil for sautéing

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add the Italian sausage to the pot and cook for about 5-7 minutes or until browned, breaking it into smaller pieces as it cooks.
  2. Once the sausage is browned, add chopped onion, garlic, carrots, and celery to the pot. Stir and cook for about 5 minutes until the vegetables start to soften.
  3. Add the diced tomatoes (with juice) and the broth to the pot. Stir everything together and bring it to a simmer.
  4. Once the soup is simmering, add the pasta to the pot and cook according to package instructions, usually about 8-10 minutes, stirring occasionally.
  5. When the pasta is almost done, stir in the fresh spinach and Italian seasoning, then let it simmer for another 2-3 minutes until the spinach wilts.
  6. Taste and adjust with salt and pepper according to your preference.
  7. Ladle the soup into bowls and enjoy.

Notes

Serve with crusty Italian bread and sprinkle with freshly grated Parmesan cheese for added flavor. Store leftovers in airtight containers.
