Ingredients
  

For the Chicken
  • 2 pieces boneless chicken breasts Ensure they are evenly sized for even cooking.
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon olive oil Plus extra for the skillet.
  • Salt and pepper to taste Use to season chicken and sauce.
  • 1 cup cooked rice Use any type of rice you prefer.
  • Chopped parsley For garnish, optional.

Method
 

Prepare the Sauce
  1. In a bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper until well combined and smooth.
Heat the Skillet
  1. Place a skillet over medium heat and add a little olive oil to coat the bottom.
Cook the Chicken
  1. Once the skillet is hot, add the chicken breasts and cook for 5-6 minutes on each side until golden brown.
Add the Sauce
  1. Pour the honey mustard sauce over the chicken, cover, and cook for another 10-15 minutes until fully cooked.
Check the Temperature
  1. Ensure the chicken reaches an internal temperature of 165°F (75°C) before serving over cooked rice.

Notes

For best flavor, consider marinating the chicken in the honey mustard sauce for a few hours. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
