  • 1 lb boneless, skinless chicken thighs Select fresh, high-quality chicken for best flavor.
  • 1 cup long-grain rice You can also use jasmine or basmati rice.
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce Feel free to use your favorite brand.
  • 1/4 cup honey Maple syrup or brown sugar can be used as substitutes.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika Adds depth to the dish.
  • 1 cup mixed vegetables (optional) Peas, carrots, and bell peppers work well.
  • Chopped green onions for garnish Adds freshness and color.

Method
 

Preparation
  1. Season the chicken thighs with a mixture of garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a large skillet, heat oil over medium heat and sear the seasoned chicken thighs for about 3-4 minutes on each side until golden brown. Remove and set aside.
Cooking
  1. In a bowl, combine BBQ sauce and honey. Optionally, add soy sauce and minced garlic.
  2. In the same skillet, toast the uncooked rice for 1-2 minutes.
  3. Add chicken broth to the toasted rice and stir in half of the sauce mixture.
  4. Place the seared chicken on top of the rice and pour the remaining sauce over it. Cover and simmer for about 15 minutes.
  5. After 15 minutes, if using mixed vegetables, add them and cook for an additional 5 minutes until the rice is tender and chicken is fully cooked.
  6. Let the dish sit for 5 minutes off heat before serving.

Notes

Serve straight from the skillet or plated. Pair with a simple side salad or crusty bread. This dish is great for meal prep!
