  • 1 lb boneless, skinless chicken thighs or breasts Chicken thighs are moister, but breasts are a leaner option.
  • 1 cup long-grain rice Toasted before adding liquid.
  • 2 cups chicken broth Can substitute with vegetable broth or water.
  • ½ cup BBQ sauce Choose your favorite type.
  • ¼ cup honey Adds sweetness.
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • to taste salt and pepper Adjust according to preference.
Vegetables
  • 1 cup mixed vegetables Fresh or frozen.
Garnish
  • to taste chopped green onions or parsley For garnish.

Method
 

Preparation
  1. Heat a large skillet over medium heat.
  2. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
Cooking
  1. Sear the seasoned chicken in the hot skillet for 3-4 minutes on each side until golden brown, then remove and set aside.
  2. Toast the uncooked rice in the same pan for 1-2 minutes.
  3. Combine chicken broth, BBQ sauce, and honey in the skillet, stirring to mix well.
  4. Return chicken to the skillet, nestling it on top of the rice mixture.
  5. Bring to a boil, lower heat, cover, and let simmer for 15 minutes.
  6. Sprinkle mixed vegetables over the rice, cover, and cook for an additional 5 minutes.
  7. Check the doneness of rice and chicken temperature (should be at least 165°F).
  8. Remove from heat and let sit for 5 minutes.
Serving
  1. Fluff the rice, garnish with green onions or parsley, and serve hot.

Notes

This dish can be served family-style or plated individually. It pairs well with a side salad or tortilla chips.
