Preparation
- Heat a large skillet over medium heat.
- Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
Cooking
- Sear the seasoned chicken in the hot skillet for 3-4 minutes on each side until golden brown, then remove and set aside.
- Toast the uncooked rice in the same pan for 1-2 minutes.
- Combine chicken broth, BBQ sauce, and honey in the skillet, stirring to mix well.
- Return chicken to the skillet, nestling it on top of the rice mixture.
- Bring to a boil, lower heat, cover, and let simmer for 15 minutes.
- Sprinkle mixed vegetables over the rice, cover, and cook for an additional 5 minutes.
- Check the doneness of rice and chicken temperature (should be at least 165°F).
- Remove from heat and let sit for 5 minutes.
Serving
- Fluff the rice, garnish with green onions or parsley, and serve hot.
