Method
Mix the Dough
- In a stand mixer bowl, combine flour, sugar, instant yeast, warm milk (or water), melted butter, and salt. Mix with a dough hook for 4-5 minutes until smooth and elastic.
Let the Dough Rise
- Cover the bowl with a clean towel or plastic wrap and place it in a warm spot. Let it rise for 30 to 60 minutes until doubled in size.
Prepare to Bake
- Preheat the oven to 450°F (232°C) and line baking sheets with parchment paper. In a large pot, bring 9 cups of water to a boil. Carefully add the baking soda.
Shape the Pretzel Bites
- Cut the risen dough into 12 pieces. Roll each piece into a 1-inch thick rope, then cut into 1-2 inch pieces to create pretzel bites.
Boil the Bites
- Add pretzel bites to the boiling water, boiling each for 30 seconds. Remove with a slotted spoon and place on prepared baking sheets.
Brush and Bake
- Beat egg with water for egg wash. Brush over each pretzel bite and sprinkle with coarse salt. Bake for 12-14 minutes until golden brown.
Serve
- Let cool slightly and serve warm with honey mustard or your favorite dipping sauce.
Notes
Store leftovers in an airtight container for up to 2-3 days at room temperature. For longer storage, freeze in a freezer-safe bag for approximately 2-3 months.
