Ingredients
  

Muffin Batter
  • 10 oz fresh blueberries
  • 1 cup plain flour
  • 3/4 cup thick Greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey adjust to taste
  • 1 large egg
  • 1 tsp baking powder use fresh for best results
  • 1 tsp baking soda use fresh for best results
  • 1 tsp pure vanilla extract
  • 1/2 cup vanilla-flavored protein powder experiment with different flavors

Method
 

Preparation and Baking
  1. Preheat your oven to 360°F (180°C).
  2. In a large mixing bowl, combine the egg, honey, Greek yogurt, vanilla extract, and olive oil, whisking until smooth.
  3. Add the plain flour, vanilla-flavored protein powder, baking powder, and baking soda to the wet mixture. Stir gently until just combined.
  4. Fold in the fresh blueberries carefully.
  5. Spoon the batter into a lined muffin pan, dividing evenly to create 12 muffins.
  6. Bake in the center of the preheated oven for 15-20 minutes.
  7. Allow to cool in the pan for a few minutes before transferring to a wire rack.
  8. Serve warm, optionally with butter or cream cheese.

Notes

These muffins can be stored at room temperature for a few days, in the fridge for about a week, or frozen for up to 3 months.
