Preparation and Baking
- Preheat your oven to 360°F (180°C).
- In a large mixing bowl, combine the egg, honey, Greek yogurt, vanilla extract, and olive oil, whisking until smooth.
- Add the plain flour, vanilla-flavored protein powder, baking powder, and baking soda to the wet mixture. Stir gently until just combined.
- Fold in the fresh blueberries carefully.
- Spoon the batter into a lined muffin pan, dividing evenly to create 12 muffins.
- Bake in the center of the preheated oven for 15-20 minutes.
- Allow to cool in the pan for a few minutes before transferring to a wire rack.
- Serve warm, optionally with butter or cream cheese.
Notes
These muffins can be stored at room temperature for a few days, in the fridge for about a week, or frozen for up to 3 months.
