Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook ground beef and chopped onions for 5 to 7 minutes until browned and onions are soft. Drain excess fat.
Layering and Baking
- Layer half of the sliced potatoes in a baking dish.
- Spread the cooked beef and onion mixture over the potatoes.
- Spoon the cream of mushroom soup over the beef layer.
- Add the remaining sliced potatoes on top and season with salt and pepper.
- Cover with aluminum foil and bake for 1 hour.
- After 1 hour, remove the foil, sprinkle cheddar cheese on top, and bake for an additional 15 minutes.
- Let the casserole cool for a few minutes before serving.
Notes
Hobo Casserole is perfect for leftovers and great for meal prepping. Serve with a side salad or crusty bread for a complete meal.
