Main Ingredients
  • 1 pound ground beef Choose lean ground beef for a healthier option.
  • 4 medium potatoes, sliced Peel or leave skins on for extra fiber.
  • 1 can cream of mushroom soup Use other soups for variation, like cream of chicken.
  • 1 cup shredded cheddar cheese Feel free to use different cheese types.
  • 1 medium onion, chopped
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook ground beef and chopped onions for 5 to 7 minutes until browned and onions are soft. Drain excess fat.
Layering and Baking
  1. Layer half of the sliced potatoes in a baking dish.
  2. Spread the cooked beef and onion mixture over the potatoes.
  3. Spoon the cream of mushroom soup over the beef layer.
  4. Add the remaining sliced potatoes on top and season with salt and pepper.
  5. Cover with aluminum foil and bake for 1 hour.
  6. After 1 hour, remove the foil, sprinkle cheddar cheese on top, and bake for an additional 15 minutes.
  7. Let the casserole cool for a few minutes before serving.

Notes

Hobo Casserole is perfect for leftovers and great for meal prepping. Serve with a side salad or crusty bread for a complete meal.
