  1. Peel and grate the sweet potatoes into fine pieces.
  2. Squeeze out excess moisture by placing the shredded sweet potatoes in a clean kitchen towel and twisting it to extract moisture.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  4. Add the finely chopped onion and cook for about 3-4 minutes until it becomes soft and translucent.
  5. Add the grated sweet potatoes to the skillet, spreading them evenly.
  6. Season the mixture with salt, pepper, and any optional spices. Stir gently to combine.
  7. Cook for 5-7 minutes without stirring to develop a crispy layer on the bottom.
  8. Check if the bottom is golden brown and carefully flip the hash browns using a spatula. Cook the other side for an additional 5-7 minutes until golden and crispy.
  9. Remove the hash browns from the skillet and serve warm.
