  • 1 cup Greek yogurt Choose plain Greek yogurt.
  • 1/2 cup peanut butter Use natural peanut butter with no added sugars or oils.
  • 1/4 cup honey Adjust according to taste preference.
Dry Ingredients
  • 1 cup oats Use rolled oats for better texture.
  • 1/2 teaspoon vanilla extract Can substitute with almond extract for variation.
  • 1/4 teaspoon baking soda Ensure it is fresh for best results.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, add Greek yogurt, peanut butter, and honey. Mix until creamy and smooth.
  3. Add oats, vanilla extract, and baking soda to the wet mixture. Stir until mixed into a thick dough.
  4. Drop spoonfuls of dough onto a lined baking sheet, leaving space between each cookie.
  5. Bake for 12-15 minutes until lightly golden and firm to the touch.
  6. Cool the cookies on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a few days. For longer storage, refrigerate them for up to a week or freeze for up to three months.
