Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, add Greek yogurt, peanut butter, and honey. Mix until creamy and smooth.
- Add oats, vanilla extract, and baking soda to the wet mixture. Stir until mixed into a thick dough.
- Drop spoonfuls of dough onto a lined baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes until lightly golden and firm to the touch.
- Cool the cookies on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
