Preparation
  1. In a large mixing bowl, combine almond flour, coconut flour, baking powder, cinnamon, erythritol (or sugar substitute), and salt. Mix thoroughly.
  2. In another bowl, mix the unsweetened applesauce, vanilla extract, and melted coconut oil until well blended.
  3. Add the wet mixture to the dry ingredients and mix until it forms a sticky dough.
Cooking
  1. Preheat your air fryer to 350°F (175°C).
  2. Shape tablespoon-sized portions of the dough into small bites or discs.
  3. Spray the air fryer basket with cooking spray and arrange the churro bites inside, ensuring they are not touching.
  4. Cook for 8-10 minutes or until golden brown. Keep an eye on them as cooking times may vary based on your air fryer.
  5. Once cooked, toss the churro bites in a mixture of cinnamon and erythritol before serving.
