  • 1 lb ground beef (80/20 blend)
  • 2 cups green beans (trimmed, fresh or thawed frozen)
  • 1 cup diced onion (yellow or white)
  • 1 cup sliced button or baby bella mushrooms
  • 3 tsp minced garlic (fresh)
  • ¼ cup low-sodium beef or chicken broth
  • cup full-fat sour cream
  • 2 Tbsp cream cheese (room temperature)
  • ½ tsp sea salt or to taste
  • ½ tsp freshly ground black pepper
  • ½ tsp Worcestershire sauce
  • tsp dried thyme
  • 2 cups shredded Colby Jack cheese use 1 cup for lighter version

Method
 

Preparation
  1. Heat a large cast-iron skillet over medium heat and add the ground beef.
  2. Cook the beef for about 5 minutes, breaking it up with a spatula until there is no pink left. Drain the beef, leaving about 1 tablespoon of fat in the pan.
  3. Set the cooked beef aside.
  4. In the same skillet, add the diced onion to the reserved fat and cook for 3-4 minutes until translucent.
  5. Add the sliced mushrooms and sauté for an additional 2 minutes until tender.
  6. Add the green beans, minced garlic, and broth, cooking for 2-3 minutes until the green beans are bright green and crisp-tender.
Making the Sauce
  1. Lower the heat to medium-low and add the room temperature cream cheese, stirring until melted.
  2. Mix in the sour cream to create a creamy sauce.
Combining and Cooking
  1. Return the cooked ground beef to the skillet and stir in the sea salt, black pepper, Worcestershire sauce, and dried thyme until combined.
  2. Sprinkle the shredded Colby Jack cheese over the mixture.
  3. Broil for 1-2 minutes until bubbly, or cover and cook on low heat until cheese melts (3-4 minutes).

Notes

Use fresh ingredients for best flavor. Adjust seasonings to taste. For a different flavor, try using different cheeses or adding spices.
