Preparation
- Preheat your oven to 400°F (200°C).
- Grease a 9×13-inch baking dish with olive oil or cooking spray.
- In a large skillet, heat olive oil over medium heat and sauté the diced onion for 3-4 minutes until softened.
- Add the ground turkey to the skillet and cook for 5-6 minutes, browning it and draining any excess fat.
- Stir in the minced garlic and diced red bell pepper, cooking for another 1-2 minutes.
- Add the diced sweet potatoes, smoked paprika, ground cumin, dried thyme, salt, and pepper. Mix everything well and cook for an additional 3-5 minutes.
- Transfer the turkey and sweet potato mixture to the greased baking dish and spread it evenly.
- Cover the baking dish with aluminum foil and place it in the preheated oven, baking for about 25 minutes.
- After 25 minutes, remove the foil, sprinkle the shredded cheese on top, and bake uncovered for another 10-15 minutes or until the cheese is melted and bubbly.
- Garnish with fresh parsley or cilantro before serving.
Notes
This dish is versatile; add other vegetables or switch the cheese to your favorites. Store leftovers in airtight containers in the refrigerator for 3-4 days or freeze for 2-3 months.
