  • 1 lb ground turkey
  • 2 large sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese
  • Fresh parsley or cilantro, chopped, for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Grease a 9×13-inch baking dish with olive oil or cooking spray.
  3. In a large skillet, heat olive oil over medium heat and sauté the diced onion for 3-4 minutes until softened.
  4. Add the ground turkey to the skillet and cook for 5-6 minutes, browning it and draining any excess fat.
  5. Stir in the minced garlic and diced red bell pepper, cooking for another 1-2 minutes.
  6. Add the diced sweet potatoes, smoked paprika, ground cumin, dried thyme, salt, and pepper. Mix everything well and cook for an additional 3-5 minutes.
  7. Transfer the turkey and sweet potato mixture to the greased baking dish and spread it evenly.
  8. Cover the baking dish with aluminum foil and place it in the preheated oven, baking for about 25 minutes.
  9. After 25 minutes, remove the foil, sprinkle the shredded cheese on top, and bake uncovered for another 10-15 minutes or until the cheese is melted and bubbly.
  10. Garnish with fresh parsley or cilantro before serving.

Notes

This dish is versatile; add other vegetables or switch the cheese to your favorites. Store leftovers in airtight containers in the refrigerator for 3-4 days or freeze for 2-3 months.
