  • 1 lb ground turkey Lean meat option
  • 1 can black beans, rinsed and drained Adds protein and fiber
  • 1 cup enchilada sauce Use store-bought or homemade
  • 1 teaspoon chili powder Adjust to taste
  • 1 teaspoon cumin
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 pieces tortillas Use corn or whole wheat
  • 1 cup shredded cheese (optional) For topping
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the diced onion and minced garlic over medium heat until soft, about 3-5 minutes.
  3. Add ground turkey, chili powder, cumin, salt, and pepper, and cook until the turkey is browned, about 7-10 minutes.
  4. Stir in the black beans and half of the enchilada sauce, mixing well.
  5. Fill each tortilla with the turkey mixture, roll them up, and place seam-side down in a baking dish.
  6. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle shredded cheese on top if desired.
  7. Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 10 minutes.
  8. Let the enchiladas cool for a few minutes before serving.

Notes

Serve warm with toppings like sour cream, guacamole, or fresh herbs. Can be customized with different fillings or spices.
