Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the diced onion and minced garlic over medium heat until soft, about 3-5 minutes.
- Add ground turkey, chili powder, cumin, salt, and pepper, and cook until the turkey is browned, about 7-10 minutes.
- Stir in the black beans and half of the enchilada sauce, mixing well.
- Fill each tortilla with the turkey mixture, roll them up, and place seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle shredded cheese on top if desired.
- Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 10 minutes.
- Let the enchiladas cool for a few minutes before serving.
