  • 8 pieces flour or corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade) You can use salsa or a simple tomato sauce mixed with spices if you don’t have enchilada sauce.
  • 1 cup shredded cheddar or Monterey Jack cheese Feel free to customize the cheese type.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder Adjust for more spice if preferred.
  • Sour cream (for topping) Top enchiladas before serving.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with diced onions until they become translucent, about 5-7 minutes.
  3. Add the minced garlic, cumin, and chili powder to the skillet. Sauté for another minute until fragrant.
  4. Spoon the beef mixture onto each tortilla, roll them tightly, and place seam-side down in a greased baking dish.
  5. Pour the enchilada sauce over the rolled tortillas and sprinkle with cheese.
  6. Bake uncovered for 20-25 minutes, until the enchiladas are bubbly and golden.

Notes

Ground Beef Enchiladas are best served hot from the oven. You can top them with a dollop of sour cream and a sprinkle of chopped cilantro for an extra touch. They pair well with a side of rice and beans, or a fresh salad. If you have leftovers, they can be stored in an airtight container in the refrigerator for up to 3 days.
