- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef with diced onions until they become translucent, about 5-7 minutes.
- Add the minced garlic, cumin, and chili powder to the skillet. Sauté for another minute until fragrant.
- Spoon the beef mixture onto each tortilla, roll them tightly, and place seam-side down in a greased baking dish.
- Pour the enchilada sauce over the rolled tortillas and sprinkle with cheese.
- Bake uncovered for 20-25 minutes, until the enchiladas are bubbly and golden.
Notes
Ground Beef Enchiladas are best served hot from the oven. You can top them with a dollop of sour cream and a sprinkle of chopped cilantro for an extra touch. They pair well with a side of rice and beans, or a fresh salad. If you have leftovers, they can be stored in an airtight container in the refrigerator for up to 3 days.
