  • 4 cups fresh green beans, trimmed and blanched Fresh green beans provide the best texture and flavor.
  • 1 can cream of mushroom soup You can substitute with homemade mushroom soup.
  • 1/2 cup milk
  • 1 cup French fried onions, divided Add more for extra crunch.
  • 1/2 cup sliced mushrooms (optional) Consider portobello or shiitake mushrooms for added flavor.
  • 1 tablespoon butter (optional, for sautéing mushrooms) This step is optional if not using mushrooms.
  • 1/2 teaspoon garlic powder (optional) Enhances the flavor of the casserole.
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If using mushrooms, sauté them in butter over medium heat until tender and caramelized.
Mixing
  1. In a large bowl, mix cream of mushroom soup, milk, garlic powder, salt, and pepper.
  2. Add blanched green beans and sautéed mushrooms (if using) and gently toss until well coated.
Baking
  1. Pour the mixture into a casserole dish and spread it evenly.
  2. Bake for 20-25 minutes or until bubbly and golden.
  3. Stir in half of the French fried onions, then sprinkle the remaining onions on top.
  4. Return to the oven and bake for an additional 5-7 minutes until onions are golden brown.

Notes

For best results, sprinkle fried onions right before serving to maintain their crunch. Leftovers can be refrigerated for 3-4 days or frozen for up to 3 months.
