Preparation
- Marinate the chicken by mixing olive oil, minced garlic, lemon juice, salt, and pepper in a bowl. Add chicken and coat well, then refrigerate for at least 30 minutes.
Cooking
- Heat a grill or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes per side or until cooked through (internal temperature of 165°F). Let rest before slicing.
Prepare Vegetables
- Wash and chop the cucumber, dice the tomatoes, and slice the red onion. Toss the chopped vegetables with crumbled feta in a mixing bowl.
Make Tzatziki Sauce
- In a bowl, mix yogurt, grated cucumber, minced garlic, lemon juice, and dill. Stir until combined and adjust seasoning to taste.
Assembly
- In a serving bowl, layer with a bed of lettuce/mixed greens, sliced chicken, and veggie mix. Add tzatziki sauce on top or on the side.
Serving
- Serve the bowls fresh with optional warm pita bread on the side.
Notes
Store leftovers in separate airtight containers in the refrigerator for up to three days. Reheat chicken gently and serve tzatziki cold.
