Ingredients
  

For the Chicken
  • 2 pieces Chicken breast Lean protein is perfect for this dish.
  • 2 tablespoons Olive oil Adds moisture and richness to the chicken.
  • 2 cloves Garlic Minced for flavor enhancement.
  • 2 tablespoons Lemon juice Adds acidity and brightness.
  • 1 teaspoon Salt Essential seasoning.
  • 1 teaspoon Pepper Essential seasoning.
Fresh Vegetables
  • 1 cup Cucumber Chopped into small pieces for crunch.
  • 1 cup Tomatoes Diced; slightly sweet.
  • 1 medium Red onion Thinly sliced for sharpness and zest.
  • 1/2 cup Feta cheese Crumbled for creamy saltiness.
  • 4 cups Lettuce or mixed greens Base for the bowl.
Tzatziki Sauce
  • 1 cup Yogurt Base for the sauce.
  • 1/2 cup Cucumber Grated for tzatziki texture.
  • 2 cloves Garlic Minced for flavor.
  • 1 tablespoon Lemon juice Adds brightness.
  • 1 teaspoon Dill For flavor enhancement.

Method
 

Preparation
  1. Marinate the chicken by mixing olive oil, minced garlic, lemon juice, salt, and pepper in a bowl. Add chicken and coat well, then refrigerate for at least 30 minutes.
Cooking
  1. Heat a grill or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes per side or until cooked through (internal temperature of 165°F). Let rest before slicing.
Prepare Vegetables
  1. Wash and chop the cucumber, dice the tomatoes, and slice the red onion. Toss the chopped vegetables with crumbled feta in a mixing bowl.
Make Tzatziki Sauce
  1. In a bowl, mix yogurt, grated cucumber, minced garlic, lemon juice, and dill. Stir until combined and adjust seasoning to taste.
Assembly
  1. In a serving bowl, layer with a bed of lettuce/mixed greens, sliced chicken, and veggie mix. Add tzatziki sauce on top or on the side.
Serving
  1. Serve the bowls fresh with optional warm pita bread on the side.

Notes

Store leftovers in separate airtight containers in the refrigerator for up to three days. Reheat chicken gently and serve tzatziki cold.
