Preparation
- Preheat your oven to 400°F (200°C).
- Slice the sweet potatoes into rounds, about 1/4 inch thick.
- Toss the sweet potato rounds with olive oil, salt, and pepper.
- Spread the rounds out on a baking sheet in a single layer.
Cooking
- Bake in the preheated oven for about 25-30 minutes, flipping halfway through.
- Remove from the oven and drizzle honey over the warm sweet potato rounds.
- Sprinkle crumbled feta cheese on top.
Serving
- Garnish with fresh herbs if desired and serve immediately.
