  • 1/2 cup honey
  • 1 cup feta cheese, crumbled Can substitute with goat cheese or blue cheese.
  • 2 tablespoons olive oil Use high-quality for best results.

  • optional Fresh herbs for garnish Parsley or thyme work well.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes into rounds, about 1/4 inch thick.
  3. Toss the sweet potato rounds with olive oil, salt, and pepper.
  4. Spread the rounds out on a baking sheet in a single layer.
Cooking
  1. Bake in the preheated oven for about 25-30 minutes, flipping halfway through.
  2. Remove from the oven and drizzle honey over the warm sweet potato rounds.
  3. Sprinkle crumbled feta cheese on top.
Serving
  1. Garnish with fresh herbs if desired and serve immediately.
