  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger Use fresh for best flavor.
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsweetened cocoa powder
Wet Ingredients
  • 1/2 cup vegetable oil
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
For Dusting
  • as needed Powdered sugar For rolling the cookie dough balls.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the all-purpose flour, ground ginger, ground cinnamon, baking soda, salt, and cocoa powder.
  3. In a separate bowl, mix the vegetable oil, brown sugar, granulated sugar, molasses, egg, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until fully combined. The dough should be thick.
  5. Cover the bowl and chill the dough in the refrigerator for about 30 minutes.
Baking
  1. After chilling, scoop dough and roll into balls. Roll each ball in powdered sugar to coat.
  2. Arrange the cookie balls on a lined baking sheet, spaced 2 inches apart.
  3. Bake in the preheated oven for 10-12 minutes until the edges are set and tops appear crinkled.
  4. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For an extra festive touch, drizzle melted chocolate on top or use colored sugar instead of powdered sugar for dusting. Store cookies in an airtight container for up to one week or freeze for three months.
