Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the all-purpose flour, ground ginger, ground cinnamon, ground cloves, baking soda, salt, and cocoa powder.
- In another bowl, mix the brown sugar, molasses, vegetable oil, and vanilla extract until smooth.
- Gradually add the dry mix to the wet mix and stir until a thick cookie dough forms.
- Cover the dough with plastic wrap and chill in the refrigerator for 30 minutes.
Baking
- Scoop tablespoons of dough and roll them into balls, then coat each ball in powdered sugar.
- Arrange the dough balls on a baking sheet lined with parchment paper, spacing them at least two inches apart.
- Bake in the oven for 10-12 minutes until the edges are set but the centers remain soft.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature, or freeze for extended storage. For a festive touch, sprinkle powdered sugar on top before serving.
