  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsweetened cocoa powder High-quality cocoa powder recommended
Wet Ingredients
  • 1 cup brown sugar Packed
  • 1/2 cup molasses
  • 1/4 cup vegetable oil Can substitute with plant-based oil for vegan option
  • 1 teaspoon vanilla extract
For Dusting
  • 1/2 cup powdered sugar For coating the cookie dough

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the all-purpose flour, ground ginger, ground cinnamon, ground cloves, baking soda, salt, and cocoa powder.
  3. In another bowl, mix the brown sugar, molasses, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the dry mix to the wet mix and stir until a thick cookie dough forms.
  5. Cover the dough with plastic wrap and chill in the refrigerator for 30 minutes.
Baking
  1. Scoop tablespoons of dough and roll them into balls, then coat each ball in powdered sugar.
  2. Arrange the dough balls on a baking sheet lined with parchment paper, spacing them at least two inches apart.
  3. Bake in the oven for 10-12 minutes until the edges are set but the centers remain soft.
  4. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature, or freeze for extended storage. For a festive touch, sprinkle powdered sugar on top before serving.
