  • 4 pieces boneless, skinless chicken breasts Use fresh or frozen.
  • 1.5 pounds baby potatoes, halved Wash and halve before adding to crockpot.
  • 1 cup chicken broth Use low sodium if preferred.
  • 0.5 cup grated parmesan cheese For a richer flavor.
  • 4 cloves garlic, minced Adjust according to taste.
  • 1 tablespoon Italian seasoning Can be adjusted for stronger flavors.
  • 1 teaspoon salt Or to taste.
  • 0.5 teaspoon black pepper Adjust to taste.
  • 0.5 teaspoon red pepper flakes Optional for added heat.
  • 2 tablespoons olive oil For coating chicken.
  • Fresh parsley to garnish Fresh parsley for garnish Optional for presentation.

Method
 

Preparation
  1. Wash and halve the baby potatoes.
  2. Mince the garlic cloves and set aside.
  3. Rub chicken breasts with olive oil and season with Italian seasoning, salt, black pepper, and red pepper flakes.
Cooking
  1. Place halved potatoes in the bottom of the crockpot.
  2. Add the seasoned chicken on top of the potatoes.
  3. Pour chicken broth over chicken and potatoes.
  4. Sprinkle minced garlic and parmesan cheese over the dish.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  6. Check the chicken's internal temperature to ensure it reaches 165°F.
  7. Remove from crockpot and serve, drizzling the sauce over the top.
  8. Garnish with fresh parsley if desired.

Notes

For storage, cool before transferring to an airtight container. Refrigerate for 3-4 days or freeze for up to three months.
