Preparation
- Preheat the oven to 160ºC (320ºF) for fan or 170ºC (338ºF) for conventional ovens. Line your baking tray with parchment paper.
- In a heatproof bowl, melt the chopped dark chocolate and butter over a pan of simmering water. Stir until melted, then mix in the vanilla extract.
Mixing Ingredients
- In a medium mixing bowl, beat the caster sugar, demerara sugar, and eggs together with an electric hand whisk on high speed until light, thick, and fluffy (about 5 minutes).
- Sift the flour, cocoa powder, baking powder, and salt into another bowl, then mix in the chocolate chips.
- Gently fold the melted chocolate mixture into the whipped eggs and sugars.
- Carefully fold the dry ingredients into the wet mixture until just combined.
Baking
- Spoon tablespoons of batter onto the prepared baking tray, spacing them apart. Bake for 12 to 14 minutes until set with a crackly top.
- Remove from the oven and sprinkle with sea salt if desired. Cool on the tray for 10 minutes, then transfer to a cooling rack.
Notes
For best results, use room temperature ingredients and be careful not to over-mix the batter. You can also add different types of chocolate chips or nuts for variation.
