- Gather all ingredients, ensuring you have fresh peaches.
- Preheat your oven to 425 degrees F (220 degrees C).
- In a medium bowl, combine sliced peaches with white and brown sugars, cinnamon, nutmeg, lemon juice, and cornstarch. Pour into a baking dish and bake for 10 minutes.
- For the topping, mix flour, white sugar, brown sugar, baking powder, and salt in a bowl. Cut in the butter until it resembles coarse crumbs, then stir in boiling water until just combined.
- After 10 minutes, remove peaches from the oven and spoon topping over the peaches.
- Mix together 3 tablespoons of sugar and 1 teaspoon of cinnamon, then sprinkle over the topping.
- Return to the oven and bake for another 30 minutes until the topping is golden brown and bubbly.
- Let cool slightly before serving, best enjoyed warm.
