Method
Cooking rice
- Cook the rice according to the package instructions, usually boiling water, adding rice, and cooking covered until soft. Set aside.
Preparing meat
- In a skillet over medium heat, add the ground beef or turkey. Cook and break it apart with a spoon for even cooking.
- Drain any excess fat, then add the taco seasoning. Add a splash of water, stir, and let simmer for about 5 minutes.
Mixing ingredients
- In a large bowl, combine the cooked rice, seasoned meat, black beans, corn, and diced tomatoes. Mix well until all ingredients are combined.
Serving
- Spoon the mixture into bowls. Top with shredded cheese, avocado slices, and a dollop of sour cream. Optionally sprinkle with chopped cilantro.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Avoid freezing for best results, but you can freeze the cooked meat, beans, and corn separately.
