Ingredients
  

Main Ingredients
  • 1 cup rice White or brown rice can be used.
  • 1 lb ground beef or turkey Choose meat according to preference.
  • 1 packet taco seasoning Adjust the spice level according to taste.
  • 1 can black beans Drain and rinse before use.
  • 1 cup corn Can be canned or frozen.
  • 1 cup diced tomatoes Fresh or canned tomatoes can be used.
  • 1 cup shredded cheese Cheddar or your favorite cheese.
  • 1 each avocado, sliced
  • to taste sour cream Optional topping.
  • to taste chopped cilantro Optional garnish.
  • to taste salt and pepper For seasoning.

Method
 

Cooking rice
  1. Cook the rice according to the package instructions, usually boiling water, adding rice, and cooking covered until soft. Set aside.
Preparing meat
  1. In a skillet over medium heat, add the ground beef or turkey. Cook and break it apart with a spoon for even cooking.
  2. Drain any excess fat, then add the taco seasoning. Add a splash of water, stir, and let simmer for about 5 minutes.
Mixing ingredients
  1. In a large bowl, combine the cooked rice, seasoned meat, black beans, corn, and diced tomatoes. Mix well until all ingredients are combined.
Serving
  1. Spoon the mixture into bowls. Top with shredded cheese, avocado slices, and a dollop of sour cream. Optionally sprinkle with chopped cilantro.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Avoid freezing for best results, but you can freeze the cooked meat, beans, and corn separately.
