  • 1 pound ground beef Can substitute with ground turkey or lamb for variation.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn) Feel free to customize with your favorite veggies.
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • to taste Salt and pepper
  • 3 cups mashed potatoes (prepared from about 3 large potatoes) Can use leftovers or instant mashed potatoes.
  • 2 tablespoons butter For dotting on top of the mashed potatoes.
  • 1/4 cup shredded cheddar cheese (optional) Adds flavor and a golden crust.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, place the ground beef over medium heat and cook until browned, about 5-7 minutes. Drain any excess fat.
  3. Add chopped onion and minced garlic to the skillet and cook for 3-4 minutes until the onion is soft.
  4. Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Mix well and let simmer for 5-7 minutes.
  5. Transfer the beef mixture to a casserole dish and spread it evenly.
  6. Spread the prepared mashed potatoes over the beef mixture, covering it completely.
  7. Dot the mashed potatoes with butter and sprinkle shredded cheddar cheese on top if desired.
  8. Bake in the preheated oven for 20-30 minutes until the top is golden and bubbly.
  9. Allow the casserole to cool for 5 minutes before serving.

Notes

Serving suggestions: Pair with a fresh green salad or crusty bread. Sprinkle fresh parsley or chives on top for added color.
