Easy Healthy Broccoli Pasta

Ingredients
  

Pasta and Vegetables
  • 8 oz pasta (any type, such as spaghetti, penne, or fusilli)
  • 2 cups broccoli florets
Flavorings
  • 2 cloves garlic, minced Use fresh garlic for the best flavor.
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese Optional: sprinkle extra on top for serving.
  • Salt and pepper to taste
  • Red pepper flakes (optional for a little heat)

Method
 

Cooking
  1. Boil water in a large pot and cook the pasta according to package instructions until al dente, about 8 to 10 minutes.
  2. In the last 2-3 minutes of cooking time, add the broccoli florets to the pot with the pasta.
  3. While the pasta and broccoli are cooking, heat the olive oil in a large pan over medium heat.
  4. Add the minced garlic to the pan and sauté for about 1 minute until fragrant, taking care not to burn it.
  5. Drain the pasta and broccoli once cooked, then add to the pan with the garlic.
  6. Toss everything together in the pan and add the grated Parmesan cheese, mixing until it slightly melts.
  7. Season with salt, pepper, and red pepper flakes to taste before serving.
  8. Serve immediately, optionally garnishing with more Parmesan cheese.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat with a splash of water or olive oil to prevent sticking.
