  • 1 pound ground turkey Choose lean ground turkey for a healthier option.
  • 2 pieces bell peppers (any color), diced Use seasonal peppers for best flavor.
  • 1 piece onion, diced Yellow or white onion works best.
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil For sautéing.
  • 1 teaspoon chili powder Adjust to taste.
  • 1 teaspoon paprika Adds flavor and color.

Method
 

Preparation
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and minced garlic to the skillet and sauté for 3 to 4 minutes until the onion is translucent.
  3. Add the ground turkey to the skillet and cook while stirring for 7 to 10 minutes until browned, breaking it up with a spatula.
Cooking
  1. Stir in the diced bell peppers, chili powder, paprika, salt, and pepper; mix well.
  2. Let the mixture cook for another 5 to 7 minutes until the bell peppers are tender but still slightly crisp.
Serving
  1. Serve the mixture over cooked rice, in lettuce wraps, or as a filling for tacos.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for up to 3 months.
