Easy Asian Cucumber Salad

Ingredients
  

Main ingredients
  • 5 pieces Persian cucumbers
  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/2-1 tbsp sugar To taste
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp sesame seeds
  • 1/2 tbsp garlic, minced (optional)

Method
 

Preparation
  1. Rinse and clean the cucumbers under cool water, slice one end at an angle to enhance presentation.
  2. Slice the cucumbers at an angle to create oval-shaped pieces.
  3. Sprinkle 1/2 tsp of salt over cucumber slices in a bowl to draw out moisture.
  4. Refrigerate the salted cucumber slices for at least 20 minutes.
  5. After chilling, drain excess water and rinse the cucumber slices.
Dressing and Serving
  1. In the same bowl, add sesame oil, light soy sauce, sugar (to taste), rice vinegar, chili oil, sesame seeds, and minced garlic (if using).
  2. Toss the cucumber slices gently in the dressing until well coated.
  3. Serve the salad fresh, optionally garnishing with extra sesame seeds or herbs.

Notes

Best enjoyed fresh, but can be stored in an airtight container in the refrigerator for 1-2 days. Give a quick stir before serving leftovers.
