Preparation
- Rinse and clean the cucumbers under cool water, slice one end at an angle to enhance presentation.
- Slice the cucumbers at an angle to create oval-shaped pieces.
- Sprinkle 1/2 tsp of salt over cucumber slices in a bowl to draw out moisture.
- Refrigerate the salted cucumber slices for at least 20 minutes.
- After chilling, drain excess water and rinse the cucumber slices.
Dressing and Serving
- In the same bowl, add sesame oil, light soy sauce, sugar (to taste), rice vinegar, chili oil, sesame seeds, and minced garlic (if using).
- Toss the cucumber slices gently in the dressing until well coated.
- Serve the salad fresh, optionally garnishing with extra sesame seeds or herbs.
Notes
Best enjoyed fresh, but can be stored in an airtight container in the refrigerator for 1-2 days. Give a quick stir before serving leftovers.
