- In a crockpot, add the coconut milk, fresh lime juice, lime zest, honey (if using), minced garlic, salt, and pepper. Stir well to mix all these ingredients together.
Cooking
- Place the boneless, skinless chicken breasts in the crockpot, ensuring each piece is coated in the coconut lime mixture.
- Cover the crockpot and set it to cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
- Once the chicken is cooked, remove it and shred it using two forks, returning it to the crockpot to mix with the sauce.
Serving
- Serve about a cup of jasmine rice on a plate, then top it with the coconut lime chicken and garnish with fresh cilantro.
Notes
