  • 1 tablespoon honey Optional for sweetness.
  • 2 cloves garlic, minced Adds depth to the flavor.

  • Cooked jasmine rice For serving, approximately 1 cup per serving.

Method
 

Preparation
  1. In a crockpot, add the coconut milk, fresh lime juice, lime zest, honey (if using), minced garlic, salt, and pepper. Stir well to mix all these ingredients together.
Cooking
  1. Place the boneless, skinless chicken breasts in the crockpot, ensuring each piece is coated in the coconut lime mixture.
  2. Cover the crockpot and set it to cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  3. Once the chicken is cooked, remove it and shred it using two forks, returning it to the crockpot to mix with the sauce.
Serving
  1. Serve about a cup of jasmine rice on a plate, then top it with the coconut lime chicken and garnish with fresh cilantro.

Notes

This dish is great for meal prep. Store leftovers in airtight containers in the refrigerator for up to 3-4 days. You can freeze it for up to 2-3 months. Adjust lime flavor and add spice as per your preference.
