Ingredients
  

For the Beef
  • 3-4 lbs beef chuck roast Seasoned and can be seared for extra flavor
  • 1 large onion, thinly sliced Creates a flavor base
  • 3 cups beef broth For the savory broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
For Assembly
  • 4-6 pieces hoagie rolls For serving the sandwiches
  • 6 slices provolone cheese

Method
 

Preparation
  1. Season the beef chuck roast with salt, pepper, garlic powder, onion powder, and dried thyme. If desired, sear the beef in a hot skillet for added flavor.
Assembling in the Slow Cooker
  1. Place sliced onions at the bottom of the slow cooker.
  2. Lay the seasoned beef chuck roast on top of the onions.
  3. Pour in beef broth, Worcestershire sauce, and soy sauce.
Slow Cooking
  1. Cover and cook on low for 7-8 hours or high for 4-5 hours until beef is tender.
Shredding the Beef
  1. Remove beef from slow cooker and shred with forks. Return shredded beef to the slow cooker.
Preparing the Hoagie Rolls
  1. Lightly toast hoagie rolls under the broiler or in a dry skillet.
Assembling the Sandwiches
  1. Pile shredded beef onto each hoagie roll, top with provolone cheese, and broil for 1-2 minutes until cheese melts.
Serving
  1. Serve sandwiches with strained au jus in small bowls for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or microwave.
