Preparation
- Season the beef chuck roast with salt, pepper, garlic powder, onion powder, and dried thyme. If desired, sear the beef in a hot skillet for added flavor.
Assembling in the Slow Cooker
- Place sliced onions at the bottom of the slow cooker.
- Lay the seasoned beef chuck roast on top of the onions.
- Pour in beef broth, Worcestershire sauce, and soy sauce.
Slow Cooking
- Cover and cook on low for 7-8 hours or high for 4-5 hours until beef is tender.
Shredding the Beef
- Remove beef from slow cooker and shred with forks. Return shredded beef to the slow cooker.
Preparing the Hoagie Rolls
- Lightly toast hoagie rolls under the broiler or in a dry skillet.
Assembling the Sandwiches
- Pile shredded beef onto each hoagie roll, top with provolone cheese, and broil for 1-2 minutes until cheese melts.
Serving
- Serve sandwiches with strained au jus in small bowls for dipping.
