Main Ingredients
  • 8 oz spaghetti or fettuccine
  • 1 cup ripe tomatoes (diced) Use fresh, ripe tomatoes for the best flavor.
  • 1 cup heavy cream Add more for a creamier texture.
  • 4 cloves fresh garlic (minced) Do not overcook to avoid bitterness.
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil (chopped) Dried basil can be used in a pinch.
  • Salt and pepper to taste

Method
 

Cooking the Pasta
  1. Boil salted water in a large pot and cook pasta according to package instructions until al dente. Drain and set aside.
Making the Sauce
  1. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until golden brown.
  2. Add diced tomatoes, salt, and pepper. Simmer for about 5 minutes.
  3. Lower the heat and stir in heavy cream until well blended.
Combining Pasta and Sauce
  1. Toss cooked pasta in the sauce until evenly coated.
Serving
  1. Serve topped with fresh basil and optional grated Parmesan cheese.

Notes

For a filling option, add cooked chicken or shrimp. Storage: Store in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat and add a splash of water or cream.
