  • 2 cloves garlic, minced Fresh garlic is best
  • 2 tablespoons olive oil For sauteing
  • to taste Salt and pepper Adjust according to preference
  • for serving Grated Parmesan cheese Adds extra flavor

Method
 

Preparation
  1. Cook the gnocchi according to the package instructions until they float, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant.
Cooking
  1. Add the fresh spinach to the skillet and cook until it wilts.
  2. Mix in the heavy cream and crumbled feta cheese, cooking until heated through.
  3. Gently add the cooked gnocchi to the skillet and toss to combine.
  4. Season with salt and pepper to taste.
  5. Serve hot, topped with grated Parmesan cheese.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 2-3 days. Reheat with a splash of milk for best results.
