  • 1 package gnocchi
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Method
 

Preparation
  1. Cook the gnocchi according to the package instructions. Once they float to the surface, drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. Pour in the heavy cream and stir to combine. Allow it to heat and thicken slightly.
  5. Mix in the cooked gnocchi and crumbled feta cheese, stirring until everything is well combined and heated through.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with grated Parmesan cheese if desired.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently, adding a splash of cream or water if necessary. Avoid freezing the dish as the cream and feta may not hold their texture.
