- Cook the gnocchi according to the package instructions. Once they float to the surface, drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Pour in the heavy cream and stir to combine. Allow it to heat and thicken slightly.
- Mix in the cooked gnocchi and crumbled feta cheese, stirring until everything is well combined and heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese if desired.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat gently, adding a splash of cream or water if necessary. Avoid freezing the dish as the cream and feta may not hold their texture.
