Preparation
- Place the chicken breasts at the bottom of your crockpot.
- Add the diced onion and minced garlic on top of the chicken.
Cooking
- Rinse and drain the white beans, then sprinkle them over the chicken and onions in the crockpot.
- Pour in the chicken broth to create a base for the chili.
- Add the diced green chiles, cumin, chili powder, salt, and black pepper to the crockpot. Stir gently to combine.
- Cover the crockpot and cook on low for 6-7 hours or high for 3-4 hours.
- Once the chicken is tender and easy to shred, carefully remove it from the pot.
- Shred the chicken into bite-size pieces and return it to the crockpot.
- Mix in the softened cream cheese until it melts and blends into the chili.
Serving
- Ladle the creamy chili into bowls and garnish with fresh cilantro. Serve warm.
