  • 1 pound chicken breast lean, boneless
  • 1 can (15 oz) white beans, rinsed and drained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (4 oz) diced green chiles
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cream cheese, softened

Method
 

Preparation
  1. Place the chicken breasts at the bottom of your crockpot.
  2. Add the diced onion and minced garlic on top of the chicken.
Cooking
  1. Rinse and drain the white beans, then sprinkle them over the chicken and onions in the crockpot.
  2. Pour in the chicken broth to create a base for the chili.
  3. Add the diced green chiles, cumin, chili powder, salt, and black pepper to the crockpot. Stir gently to combine.
  4. Cover the crockpot and cook on low for 6-7 hours or high for 3-4 hours.
  5. Once the chicken is tender and easy to shred, carefully remove it from the pot.
  6. Shred the chicken into bite-size pieces and return it to the crockpot.
  7. Mix in the softened cream cheese until it melts and blends into the chili.
Serving
  1. Ladle the creamy chili into bowls and garnish with fresh cilantro. Serve warm.
