  • 2 tablespoons olive oil For cooking the chicken
  • 1 cup rice Can use white or brown rice
  • 2 cups chicken broth Use low-sodium if preferred
  • 1 cup heavy cream For creaminess
  • 1/2 cup grated Parmesan cheese Freshly grated for best flavor

Preparation
  1. In a large skillet, heat olive oil over medium heat.
  2. Season the chicken breast with Cajun seasoning, salt, and pepper.
  3. Add the chicken to the skillet and cook until browned and cooked through, about 6-7 minutes per side.
  4. Remove the chicken from the skillet and let it rest before slicing.
Cooking
  1. In the same skillet, add the rice and toast for a minute.
  2. Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until the rice is cooked.
  3. Stir in the heavy cream and Parmesan cheese until melted and creamy.
  4. Serve the creamy Parmesan rice topped with sliced Cajun chicken and garnish with chopped parsley.

Notes

Make sure not to overcook the chicken; it should be juicy and tender. You can add vegetables like bell peppers or spinach to the rice for extra nutrition and color, or swap out the chicken for shrimp or sausage.
