Preparation
- Start by heating a large skillet over medium heat. Pour in a splash of olive oil to coat the bottom of the skillet.
- Season both sides of the chicken breasts with garlic powder, onion powder, Italian seasoning, salt, and pepper.
Cooking
- Add the seasoned chicken breasts to the hot skillet and cook for about 6-7 minutes on one side until golden brown.
- Flip the chicken breasts and cook for another 5-6 minutes on the other side until fully cooked, reaching an internal temperature of 165°F (75°C).
- Remove the chicken from the skillet and let it rest on a cutting board.
Sauce Preparation
- In the same skillet, reduce the heat to low and pour in the marinara sauce.
- Stir in the cottage cheese until well combined.
Assembly
- Slice the rested chicken into thin strips and add it to the skillet with the sauce and cottage cheese mixture.
- Sprinkle the mozzarella and Parmesan cheese on top, cover the skillet with a lid, and let the cheese melt.
Serve
- Serve the chicken and sauce in bowls and garnish with fresh basil or parsley if desired.
Notes
This dish is great served warm on its own or with a side salad. Leftovers can be reheated for lunch, or incorporated into wraps or sandwiches.
