  • 2 pieces boneless, skinless chicken breasts (about 1 pound)
  • 1 cup cottage cheese (preferably low-fat)
  • 1 cup marinara sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil (for cooking)
  • Fresh basil or parsley (for garnish, optional)

Method
 

Preparation
  1. Start by heating a large skillet over medium heat. Pour in a splash of olive oil to coat the bottom of the skillet.
  2. Season both sides of the chicken breasts with garlic powder, onion powder, Italian seasoning, salt, and pepper.
Cooking
  1. Add the seasoned chicken breasts to the hot skillet and cook for about 6-7 minutes on one side until golden brown.
  2. Flip the chicken breasts and cook for another 5-6 minutes on the other side until fully cooked, reaching an internal temperature of 165°F (75°C).
  3. Remove the chicken from the skillet and let it rest on a cutting board.
Sauce Preparation
  1. In the same skillet, reduce the heat to low and pour in the marinara sauce.
  2. Stir in the cottage cheese until well combined.
Assembly
  1. Slice the rested chicken into thin strips and add it to the skillet with the sauce and cottage cheese mixture.
  2. Sprinkle the mozzarella and Parmesan cheese on top, cover the skillet with a lid, and let the cheese melt.
Serve
  1. Serve the chicken and sauce in bowls and garnish with fresh basil or parsley if desired.

Notes

This dish is great served warm on its own or with a side salad. Leftovers can be reheated for lunch, or incorporated into wraps or sandwiches.
