Preparation
- In a large bowl, mix together the non-dairy yogurt, protein powder (if using), cashew butter, vanilla extract, and maple syrup. Stir until smooth.
- Gently fold in the chocolate chips, being careful not to break them.
- Line a baking sheet with parchment paper.
- Scoop dollops of the mixture onto the sheet, spacing them apart.
- Place the baking sheet into the freezer for at least an hour.
Coating
- Melt the chocolate chips and coconut oil together in a microwave-safe bowl, heating in short bursts of 20 seconds.
- Dip each frozen yogurt bite into the melted chocolate, coating evenly, and place back on the baking sheet.
- Return the baking sheet to the freezer for another 30 minutes until the chocolate hardens.
Serving
- Enjoy your frozen yogurt bites immediately or store in an airtight container in the freezer.
Notes
Store the bites in an airtight container in the freezer for 2-3 months. Use parchment paper between layers to prevent sticking. Adjust sweetness prior to freezing if needed.
