Ingredients
  

Base Ingredients
  • 1 cup non-dairy yogurt (plain and unsweetened) Can use regular yogurt if not dairy-free
  • 2 tablespoons protein powder Optional for added protein
  • 1/4 cup cashew butter Can substitute with any nut/seed butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup Or honey if not vegan
Coating Ingredients
  • 1 1/2 cups chocolate chips Use dark, milk, or dairy-free as preferred
  • 2 tablespoons coconut oil For melting with chocolate

Method
 

Preparation
  1. In a large bowl, mix together the non-dairy yogurt, protein powder (if using), cashew butter, vanilla extract, and maple syrup. Stir until smooth.
  2. Gently fold in the chocolate chips, being careful not to break them.
  3. Line a baking sheet with parchment paper.
  4. Scoop dollops of the mixture onto the sheet, spacing them apart.
  5. Place the baking sheet into the freezer for at least an hour.
Coating
  1. Melt the chocolate chips and coconut oil together in a microwave-safe bowl, heating in short bursts of 20 seconds.
  2. Dip each frozen yogurt bite into the melted chocolate, coating evenly, and place back on the baking sheet.
  3. Return the baking sheet to the freezer for another 30 minutes until the chocolate hardens.
Serving
  1. Enjoy your frozen yogurt bites immediately or store in an airtight container in the freezer.

Notes

Store the bites in an airtight container in the freezer for 2-3 months. Use parchment paper between layers to prevent sticking. Adjust sweetness prior to freezing if needed.
