Ingredients
  

Soup Base Ingredients
  • 1-2 tablespoons olive oil (or ghee)
  • 1 medium onion, diced
  • 1 tablespoon fresh ginger, grated or finely minced
  • 4-5 cloves garlic cloves, grated or finely minced
  • 1-2 teaspoons turmeric powder (or 2-3 teaspoons fresh turmeric, finely grated) or a little of both, see notes
  • ¼ teaspoon mustard seed optional
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ¾-1 teaspoon salt
  • 4 cups water
  • 4 cups veggie or chicken stock
  • ¼ teaspoon cayenne or more to taste
  • 1-2 teaspoons lime juice or lemon juice (to taste) or apple cider vinegar (to taste)

Method
 

Preparation
  1. In a large heavy-bottom pot or Dutch oven, heat olive oil over medium heat.
  2. Add diced onion and sauté for about 5 minutes until fragrant and golden.
  3. Add grated ginger, minced garlic, and fresh turmeric. Sauté for an additional 2-3 minutes until the garlic is fragrant and golden.
  4. Stir in the mustard seeds, cumin, coriander, and optional turmeric powder. Sauté for another 1-2 minutes.
  5. Pour in the water and stock, then add salt. Bring the mixture to a simmer.
  6. Add a squeeze of lime (or lemon) juice or apple cider vinegar to taste. Adjust salt, lime, and spice levels as desired.
  7. You can add any ingredients you like, such as cooked veggies, beans, or pasta. Keep in mind that uncooked pasta and beans will expand, so add them in moderation (like 4 ounces dry pasta).
  8. Be mindful of cooking times for any additional ingredients you add.
Serving
  1. Serve the soup hot, garnished with fresh herbs or a sprinkle of pepper if desired.
  2. It can be enjoyed on its own or paired with warm bread for a complete meal.
Storage
  1. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  2. You can also freeze the soup in portions for up to 3 months. Just make sure to leave some room in the container for the soup to expand when frozen.

Notes

Feel free to use leftover cooked chicken or veggies to enhance the soup. To boost the flavor, add a splash of soy sauce or miso paste. If you like heat, try adding more cayenne or chili flakes. You can create a variety of different soups by changing the vegetables or proteins you add to the broth. Consider spinach, kale, or carrots, and try adding chickpeas or shredded chicken for added nutrition.
