Ingredients
  

For the Banana Bread
  • 3 pieces ripe bananas, mashed Choose bananas with brown spots for extra sweetness.
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • a pinch salt
  • 1 cup all-purpose flour
For the Cinnamon Swirl
  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 4x8 inch loaf pan.
  3. In a bowl, combine the mashed bananas with the melted butter until smooth.
  4. Stir in the sugar, beaten egg, and vanilla extract until well combined.
  5. Sprinkle the baking soda and a pinch of salt over the mixture and stir to combine.
  6. Gradually add the all-purpose flour and stir gently until just combined.
  7. In a separate bowl, mix cinnamon and brown sugar together.
  8. Pour half of the batter into the greased loaf pan, followed by half of the cinnamon-sugar mixture.
  9. Pour the remaining batter on top and sprinkle the rest of the cinnamon-sugar mixture.
  10. Use a knife to gently swirl through the batter.
Baking
  1. Place the loaf pan in the preheated oven and bake for about 60-65 minutes.
  2. Check for doneness by inserting a toothpick into the center; it should come out clean.
  3. Let the bread cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Top with butter or cream cheese, and consider pairing with coffee or tea.
