Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 4x8 inch loaf pan.
- In a bowl, combine the mashed bananas with the melted butter until smooth.
- Stir in the sugar, beaten egg, and vanilla extract until well combined.
- Sprinkle the baking soda and a pinch of salt over the mixture and stir to combine.
- Gradually add the all-purpose flour and stir gently until just combined.
- In a separate bowl, mix cinnamon and brown sugar together.
- Pour half of the batter into the greased loaf pan, followed by half of the cinnamon-sugar mixture.
- Pour the remaining batter on top and sprinkle the rest of the cinnamon-sugar mixture.
- Use a knife to gently swirl through the batter.
Baking
- Place the loaf pan in the preheated oven and bake for about 60-65 minutes.
- Check for doneness by inserting a toothpick into the center; it should come out clean.
- Let the bread cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.

Serve warm or at room temperature. Top with butter or cream cheese, and consider pairing with coffee or tea.
