Ingredients
  

Blondie Batter
  • 1 large large egg Use room temperature
  • ½ cup unsalted butter, melted Use room temperature
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can substitute with gluten-free flour
  • 1 cup light brown sugar, packed
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon, divided For batter and topping
Topping
  • 3 tablespoons granulated sugar For topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease or line an 8x8-inch baking pan with parchment paper.
Mixing
  1. In a large bowl, whisk the melted butter and brown sugar together until smooth.
  2. Add the egg, honey, and vanilla extract. Whisk until smooth and creamy.
  3. Stir in the all-purpose flour, salt, and ½ teaspoon ground cinnamon until just combined.
Baking
  1. Pour the blondie batter into the prepared baking pan and spread it evenly.
  2. In a small bowl, mix the granulated sugar with the remaining ½ teaspoon of ground cinnamon and sprinkle it over the batter.
  3. Bake for 22 to 25 minutes, or until a toothpick inserted in the center comes out clean.
Cooling and Serving
  1. Allow the blondies to cool completely in the pan before cutting into squares.
  2. Serve warm, optionally with ice cream or whipped cream.

Notes

Store leftovers in an airtight container at room temperature for 2-3 days or refrigerate for up to a week. For longer storage, freeze tightly wrapped for up to three months.
