Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
- In a large bowl, cream softened butter with granulated and brown sugar until fluffy and light (about 3-5 minutes).
- Beat in the large egg and vanilla extract until well blended.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- In a small bowl, combine the brown sugar and cinnamon for the filling.
Shaping and Baking
- Spread half of the dough onto a piece of parchment paper into a rectangle about 1/4 inch thick.
- Sprinkle the filling mixture evenly over the dough.
- Starting from one edge, roll the dough tightly into a log shape and pinch the seams to seal.
- Slice the rolled dough into rounds about 1 inch thick.
- Place the sliced cookies onto a lined baking sheet, leaving space in between.
- Bake for about 10-12 minutes or until golden brown.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Best served warm and can be enjoyed with a hot beverage or simple icing. They store well for 3-5 days at room temperature.
