  • 2 cups all-purpose flour Standard all-purpose flour.

For the Filling
  • ½ cup brown sugar, packed Use for the filling.
  • 2 tsp ground cinnamon Use for filling mix.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a large bowl, cream softened butter with granulated and brown sugar until fluffy and light (about 3-5 minutes).
  4. Beat in the large egg and vanilla extract until well blended.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. In a small bowl, combine the brown sugar and cinnamon for the filling.
Shaping and Baking
  1. Spread half of the dough onto a piece of parchment paper into a rectangle about 1/4 inch thick.
  2. Sprinkle the filling mixture evenly over the dough.
  3. Starting from one edge, roll the dough tightly into a log shape and pinch the seams to seal.
  4. Slice the rolled dough into rounds about 1 inch thick.
  5. Place the sliced cookies onto a lined baking sheet, leaving space in between.
  6. Bake for about 10-12 minutes or until golden brown.
  7. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Best served warm and can be enjoyed with a hot beverage or simple icing. They store well for 3-5 days at room temperature.
