  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened Make sure it's at room temperature
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg At room temperature
  • 2 tsp vanilla extract
Filling Ingredients
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  3. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. For the filling, mix the packed brown sugar with the ground cinnamon.
Assembly
  1. Take half of the cookie dough and roll it into a rectangle about ¼ to ½ inch thick.
  2. Evenly sprinkle the filling mixture over the rolled-out dough.
  3. Roll the dough tightly into a log to create the swirl effect.
  4. Cut the rolled dough into 1-inch rounds.
  5. Place the rounds on a lined baking sheet, leaving space between each cookie.
Baking
  1. Bake for 10-12 minutes until they are lightly golden.
  2. Allow cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack.

Notes

Serve warm with a drizzle of icing made from powdered sugar and milk. For added flavor, sprinkle extra cinnamon on top. Store in an airtight container for up to a week or freeze for up to three months.
