Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
- In another bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- For the filling, mix the packed brown sugar with the ground cinnamon.
Assembly
- Take half of the cookie dough and roll it into a rectangle about ¼ to ½ inch thick.
- Evenly sprinkle the filling mixture over the rolled-out dough.
- Roll the dough tightly into a log to create the swirl effect.
- Cut the rolled dough into 1-inch rounds.
- Place the rounds on a lined baking sheet, leaving space between each cookie.
Baking
- Bake for 10-12 minutes until they are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack.
Notes
Serve warm with a drizzle of icing made from powdered sugar and milk. For added flavor, sprinkle extra cinnamon on top. Store in an airtight container for up to a week or freeze for up to three months.
