Filling
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Method
 

Preparing the Dough
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon.
  3. In a large bowl, cream together softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
Preparing the Filling
  1. In a small bowl, mix together the packed brown sugar and ground cinnamon for the filling.
Assembling the Cookies
  1. Place half of the cookie dough on parchment paper and spread it evenly.
  2. Sprinkle the cinnamon sugar filling evenly across the dough.
  3. Roll the dough tightly from one end to the other using the parchment paper.
  4. Slice the rolled dough into rounds about ½ inch thick.
  5. Arrange the cookie rounds on a lined baking sheet, leaving space between each.
Baking the Cookies
  1. Bake in the preheated oven for 10-12 minutes, or until golden brown.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
