Method
Preparing the Dough
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon.
- In a large bowl, cream together softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
Preparing the Filling
- In a small bowl, mix together the packed brown sugar and ground cinnamon for the filling.
Assembling the Cookies
- Place half of the cookie dough on parchment paper and spread it evenly.
- Sprinkle the cinnamon sugar filling evenly across the dough.
- Roll the dough tightly from one end to the other using the parchment paper.
- Slice the rolled dough into rounds about ½ inch thick.
- Arrange the cookie rounds on a lined baking sheet, leaving space between each.
Baking the Cookies
- Bake in the preheated oven for 10-12 minutes, or until golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
