Ingredients
  

For the Cookies
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened Make sure it's at room temperature.
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg At room temperature.
  • 2 tsp vanilla extract
For the Filling
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.
  3. In a larger bowl, cream the softened butter, granulated sugar, and brown sugar together until fluffy.
  4. Beat in the large egg and vanilla extract until smooth.
  5. Gradually mix the dry ingredients into the butter mixture until combined.
  6. In a small bowl, mix together the packed brown sugar and ground cinnamon for your filling.
Assembly and Baking
  1. Take half of the dough and spread it out on parchment paper into a rectangle.
  2. Sprinkle the filling mixture evenly over the dough.
  3. Roll the dough tightly into a log shape and slice it into ½-inch rounds.
  4. Place the cookie rounds on a parchment-lined baking sheet.
  5. Bake for 10-12 minutes or until golden brown around the edges.
  6. Allow the cookies to cool on a wire rack.

Notes

Enjoy warm or store in an airtight container to keep them fresh for up to a week. For longer storage, freeze in a single layer for about an hour, then move to a freezer-safe bag.
