Ingredients
  

Cookie Ingredients
  • 270 g 270 g (2¼ cups) all-purpose flour
  • 4 g 4 g (1 tsp) baking powder
  • ¼ tsp ¼ tsp salt
  • 170 g 170 g (1½ sticks / ¾ cup) unsalted butter, softened
  • 200 g 200 g (1 cup) granulated sugar
  • 1 large egg 1 large egg, room temperature
  • 1 Tbsp 1 Tbsp vanilla extract
  • ¼ tsp ¼ tsp almond extract (optional) Optional for extra flavor
  • 54 g 54 g (⅓ cup) Christmas jimmies sprinkles
Frosting Ingredients
  • 283 g 283 g (1¼ bricks / 10 oz) full-fat cream cheese, softened
  • 184 g 184 g (13 Tbsp) salted butter, softened
  • 2 tsp 2 tsp vanilla extract (for frosting)
  • tsp ⅛ tsp salt (for frosting)
  • 150 g 150 g (1¼ cups) powdered sugar, sifted
  • 80 ml 80 ml (⅓ cup) heavy cream, very cold
  • 24 g 24 g (2 Tbsp) Christmas sprinkles (for decoration)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheets with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In a large mixing bowl, beat the softened unsalted butter and granulated sugar together until light and fluffy.
  5. Add the egg and vanilla extract to the butter mixture. Mix until well combined. Optionally add almond extract.
  6. Gradually mix the dry ingredients into the wet ingredients. Fold in the Christmas jimmies sprinkles.
  7. Use a cookie scoop or tablespoon to portion the dough onto prepared baking sheets. Flatten each dough ball slightly.
Baking
  1. Bake in the preheated oven for 9-11 minutes, until edges are set and centers are slightly soft.
  2. Cool cookies on sheets for a few minutes, then transfer to a wire rack to cool completely.
Frosting
  1. Beat the softened cream cheese and salted butter until smooth. Add vanilla extract and salt, mixing well.
  2. Gradually mix in the sifted powdered sugar, then slowly add cold heavy cream until stiff peaks form.
Decoration
  1. Once cooled, generously frost cookies and sprinkle with additional Christmas sprinkles.

Notes

Store in an airtight container at room temperature for up to one week. Refrigerate for up to two weeks or freeze for up to three months.
