Preparation
- In a large bowl, mix the chopped strawberries with plain Greek yogurt, honey, and vanilla extract until evenly combined.
Forming Clusters
- On a parchment-lined baking sheet, scoop about 2 tablespoons of the yogurt mixture and shape them into clusters. Aim to make around 10 clusters.
Freezing Clusters
- Freeze the yogurt clusters for 1 to 2 hours or until solid.
Melting Chocolate
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 15 to 30 second intervals, stirring after each, until smooth.
Coating Clusters
- Dip each frozen yogurt cluster into the melted chocolate to coat evenly, then place back on the parchment-lined sheet. Optionally, sprinkle with sea salt.
Final Freeze
- Return the chocolate-coated clusters to the freezer for about 30 minutes until the chocolate is set.
Notes
For variations, consider adding nuts for crunch, mixing in other berries, or folding in coconut flakes for a tropical twist.
