Preparation
- Combine the strawberries, Greek yogurt, honey, and vanilla extract in a large bowl. Mix until smooth.
- Scoop the mixture onto a parchment paper-lined baking sheet, aiming for about 10 clusters.
Freezing
- Place the baking sheet in the freezer until clusters are frozen solid, about 1-2 hours.
Chocolate Coating
- Melt the chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each frozen yogurt cluster into the melted chocolate, ensuring complete coverage.
- Return the chocolate-coated clusters back to the parchment paper-lined baking sheet. Sprinkle with sea salt if desired.
Final Freezing
- Freeze the clusters again for a few minutes to allow the chocolate to harden.
Serving
- Serve the Chocolate Strawberry Yogurt Clusters directly from the freezer. They can be garnished with mint or served with extra Greek yogurt.
