  • 1 tbsp honey Adjust to taste for sweetness
  • 1 tsp vanilla extract For additional flavor
For the Chocolate Coating
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil Helps to melt the chocolate smoothly

Method

Preparation
  1. In a large mixing bowl, combine the chopped strawberries, Greek yogurt, honey, and vanilla extract. Mix until smooth.
  2. Line a baking sheet with parchment paper.
Forming Clusters
  1. Scoop about 2 tablespoons of the mixture and place it on the baking sheet to form clusters with some space in between.
Freezing Clusters
  1. Place the baking sheet in the freezer and let the clusters freeze until solid, about 1 to 2 hours.
Coating with Chocolate
  1. In a microwave-safe bowl, add the chocolate chips and coconut oil. Microwave in intervals of 15-30 seconds, stirring until smooth.
  2. Remove the frozen clusters and dip each one into the melted chocolate, ensuring full coverage.
  3. Return the chocolate-dipped clusters to the lined baking sheet. Optionally sprinkle a tiny bit of sea salt on top.
Final Freeze
  1. Put the baking sheet back in the freezer for a few minutes to allow the chocolate to harden completely.

Notes

Store the clusters in an airtight container in the freezer for up to two months. Thaw slightly before serving to achieve the best texture.
