Dry Ingredients
  • 2 cups almond flour (192 g)
  • 1/4 teaspoon baking soda (1 g)
  • 1/2 teaspoon salt (3 g)
Wet Ingredients
  • 1/4 cup maple syrup (90 g)
  • 1/4 cup extra virgin olive oil (60 g)
  • 1 teaspoon pure vanilla extract (5 g)
Chocolate Chips
  • 1/3 cup dark chocolate chips (85 g)
  • pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease your skillet with a little coconut oil.
  3. In a big bowl, combine the almond flour, baking soda, salt, maple syrup, extra virgin olive oil, and pure vanilla extract. Stir until smooth.
  4. Gently fold in the dark chocolate chips.
  5. Allow the cookie dough to sit for about 5 minutes.
  6. Spoon the dough into the prepared skillet. Spread evenly and press down gently.
Baking
  1. Place the skillet in your preheated oven and bake for 15-20 minutes until edges are golden brown.
  2. Let the cookie cool in the pan for a few minutes before serving.
Serving
  1. Serve warm, optionally with a scoop of ice cream.

Notes

Store leftovers covered at room temperature for up to two days, or refrigerate for up to a week. To freeze, wrap tightly in plastic, then foil, and store for up to three months.
