Preparation
- Preheat your oven to 350°F (175°C).
- Lightly grease your skillet with a little coconut oil.
- In a big bowl, combine the almond flour, baking soda, salt, maple syrup, extra virgin olive oil, and pure vanilla extract. Stir until smooth.
- Gently fold in the dark chocolate chips.
- Allow the cookie dough to sit for about 5 minutes.
- Spoon the dough into the prepared skillet. Spread evenly and press down gently.
Baking
- Place the skillet in your preheated oven and bake for 15-20 minutes until edges are golden brown.
- Let the cookie cool in the pan for a few minutes before serving.
Serving
- Serve warm, optionally with a scoop of ice cream.
Notes
Store leftovers covered at room temperature for up to two days, or refrigerate for up to a week. To freeze, wrap tightly in plastic, then foil, and store for up to three months.
