Preparation
- Cut the chicken into small, bite-sized pieces. Season the pieces with salt and pepper.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté these vegetables for about 5 minutes until tender.
- Stir in the minced garlic and cook for an additional minute.
- Add the chicken broth, seasoned chicken, bay leaves, and dried thyme. Bring to a boil, then reduce heat and simmer for about 20 minutes.
- Stir in the cheese tortellini and cook according to package directions, usually about 5-7 minutes.
- Remove bay leaves, taste and adjust seasoning if necessary. Stir in the chopped parsley.
- Ladle the warm soup into bowls and serve hot.
Notes
For serving, consider adding grated Parmesan cheese and crusty bread. Customize by adding different vegetables or trying a variety of herbs.
