  • 1 pound boneless, skinless chicken breasts or thighs Cut into small pieces
  • 2 tablespoons olive oil For sautéing
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth You can use vegetable broth for a vegetarian version
  • 1 teaspoon dried thyme
  • 1 package (about 9 ounces) cheese tortellini, fresh or frozen
  • 1/4 cup chopped fresh parsley For garnish
  • Salt and freshly ground black pepper, to taste For seasoning

Method
 

Preparation
  1. Cut the chicken into small, bite-sized pieces. Season the pieces with salt and pepper.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté these vegetables for about 5 minutes until tender.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the chicken broth, seasoned chicken, bay leaves, and dried thyme. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  5. Stir in the cheese tortellini and cook according to package directions, usually about 5-7 minutes.
  6. Remove bay leaves, taste and adjust seasoning if necessary. Stir in the chopped parsley.
  7. Ladle the warm soup into bowls and serve hot.

Notes

For serving, consider adding grated Parmesan cheese and crusty bread. Customize by adding different vegetables or trying a variety of herbs.
