Preparation
- Warm 1 tablespoon of olive oil in a large pot over medium heat.
- Add 1 pound of sliced chicken sausage and cook for 5 to 7 minutes or until browned.
- Stir in 3 cloves of minced garlic and cook for about 1 minute until fragrant.
- Add 2 cups of broccoli florets and cook for an additional 2 to 3 minutes.
- Combine with 2 cups of orzo pasta, 4 cups of chicken broth, 1 teaspoon of Italian seasoning, and season with salt and pepper.
- Increase heat until boiling, then reduce to a simmer and cover.
- Cook for 10 to 12 minutes, stirring occasionally until orzo is tender and liquid is absorbed.
- Remove from heat and stir in 1/2 cup of grated Parmesan cheese.
- Garnish with 2 tablespoons of fresh parsley before serving.
- Optionally, add a splash of heavy cream for a richer dish.
Notes
Serve with extra Parmesan cheese, crusty bread, or a light salad. Can easily be customized with different vegetables or sausages.
