  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pound chicken sausage (sliced)
  • 2 cups broccoli florets
  • 3 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)

Method
 

Preparation
  1. Warm 1 tablespoon of olive oil in a large pot over medium heat.
  2. Add 1 pound of sliced chicken sausage and cook for 5 to 7 minutes or until browned.
  3. Stir in 3 cloves of minced garlic and cook for about 1 minute until fragrant.
  4. Add 2 cups of broccoli florets and cook for an additional 2 to 3 minutes.
  5. Combine with 2 cups of orzo pasta, 4 cups of chicken broth, 1 teaspoon of Italian seasoning, and season with salt and pepper.
  6. Increase heat until boiling, then reduce to a simmer and cover.
  7. Cook for 10 to 12 minutes, stirring occasionally until orzo is tender and liquid is absorbed.
  8. Remove from heat and stir in 1/2 cup of grated Parmesan cheese.
  9. Garnish with 2 tablespoons of fresh parsley before serving.
  10. Optionally, add a splash of heavy cream for a richer dish.

Notes

Serve with extra Parmesan cheese, crusty bread, or a light salad. Can easily be customized with different vegetables or sausages.
